Taco Salad
Taco salad
recipe with chopped turkey and a simple ingredient that replaces the unhealthy
bottled vinaigrette. This taco salad is so easy and hearty that you will
continue to prepare it again and again.
Ingredients
- 1/2 cup salsa
- 1/2 cup sliced red onion
- 1 cup shredded or chopped carrots
- 1 packet (1 oz.) taco seasoning
- 1/3 cup Italian dressing
- 3/4 cup chopped tomato
- 1 cup shredded cheddar cheese
- 1 lb. 90% lean ground beef (or ground turkey, chicken, etc.)
- 1 (15 oz.) can black beans -drained and rinsed
- 6 cups chopped romaine lettuce
- 1 cup lightly crumbled tortilla chips
Instructions
First, In a
large nonstick skillet, brown the ground beef and crack with a wooden spoon.
Once fully cooked, remove excess fat if necessary.
Then, Add
the taco seasoning packet and the water that it calls (mine asks for 1/2 cup).
Stir in black beans and bring to boiling for 5 minutes.
Remove the
beef mixture from the heat and stir in the salsa. Let it cool to room
temperature for ten minutes.
In the
meantime, place lettuce, carrots, cheese, red onion and tomato in a large bowl.
Once the
beef mixture has cooled for ten minutes, mix the salad with the vinaigrette.
Then add the beef mixture to the salad. Mix well.
Garnish with
crushed tortilla chips. Serve immediately.
