Cowboy Meatloaf and Potato Casserole
It is a good
old meal that will feed an army of hungry men and leave them satisfied. It's
called cowboy meatloaf and potato casserole.
Ingredients
- 1 Egg, lightly beaten
- 3/4 Teaspoon Salt
- 1/3 Cup Seasoned Dry Breadcrumbs
- 2/3 Cup Canned Evaporated Milk
- 1 Tablespoon Butter
- 2 Teaspoons Chili Powder
- 3/4 Cup Finely Chopped Onion
- 1 Tablespoon Chopped Fresh Flat-Leaf Parsley
- 1 Package Ore-Ida® Steam n' Mash Cut Russet Potatoes
- 1 Pound Lean Ground Beef
- 1/4 Cup Jack Daniels® Honey Smokehouse Barbecue Sauce
- 1 Cup Cooked Bacon Crumbles
- 2/3 Cup Shredded Mexican-style Cheese Blend
- 1/4 Cup Canned Crispy Fried Onions
- 1 Teaspoon Garlic Powder
Directions
First, Preheat
the oven to 375 ° F. Coat the 9x9 baking dish with a nonstick cooking spray. In
large bowl, mix together beef, onion, bread crumbs, barbecue sauce, eggs, chili
powder and salt. Squeeze gently on the bottom of the baking dish.
Then, Bake
uncovered for 20 to 25 minutes, or until cooked through. Remove from the oven
and carefully pour in any excess fat if necessary. Set the oven temperature on
the grill and place the oven rack 6 to 8 inches from the heat source.
Meanwhile,
microwave potatoes according to the instructions on the package. In a large
bowl, combine hot potatoes, milk, butter, parsley and garlic, and puree with a
potato masher. For a smoother consistency, mix with an electric mixer to the
desired consistency. Stir in bacon and fried onions. Spread evenly over the
beef mixture and sprinkle with cheese.
Grill for 3
to 5 minutes or until cheese is slightly browned. Serve hot with extra barbecue
