SOUTHERN BANANA PUDDING






Southern Banana Pudding Pie has a vanilla waffle crust, a layer of ripe bananas, a decadent and dreamy vanilla cream and a light like a cloud meringue.

Ingredients
  • 2 eggs
  • 4 Tbs butter
  • 4 large bananas sliced
  • 1 1/3 cup sugar
  • 1/2 tsp salt
  • 4 tsp vanilla extract
  • 1 large box vanilla wafers reserve 1/2 cup crushed wafers for topping
  • 2 egg yolks
  • 4 cups milk
  • 6 Tbs cornstarch
  • 1 container whipped topping or homemade

Instructions

First, In the saucepan, combine the milk, sugar, cornstarch, salt, egg and egg yolk.

Then, Heat over medium heat, whisking almost continuously until a thick fondant is obtained.

Remove from heat and stir in butter and vanilla until melted.

Cover with Saran Wrap film by squeezing the film on the pudding to prevent film formation, place it in the refrigerator and allow it to cool to room temperature.

Once cooled in a 9 "x13" baking dish, place 1/2 layer of vanilla wafers and add 1 1/2 of your bananas.

Pour half of the mixture on top, then continue the layers one more time. 
Finish your layers with banana slices, then top with whipped topping and crushed vanilla wafers.

Refrigerate at least 2-3 hours before serving. Happy Cooking TimeJ
