Moist Lemon Cake
I did it
exactly as written for my friend who loves lemon. It was a huge success! I'm
not always a big lemon fan, and I thought it would be too lemony, but it
certainly was not. I really enjoyed it and everyone was impressed!
INGREDIENTS
- 3 eggs
- 1 Cup orange juice
- 2 TB butter
- 1 1/2 Cup confectioner’s sugar
- 1/3 Cup lemon juice (need 1.5 lemons)
- 1 package instant lemon pudding
- 1/2 Cup vegetable oil
- 1 package yellow cake mix
INSTRUCTIONS
First, Preheat
the oven to 350 ° F. Butter and flour a cake pan with angels.
Then, Mix
the yellow cake mix, oil, orange juice and instant pudding. Add 3 eggs one at a
time, beating after each egg. Spread the dough in the angel cake pan making
sure the dough is even on all sides.
Bake at 350
° F for 50 minutes. Allow the cake to cool for 10 minutes then remove from the
mold.
To make the
glaze, mix the confectioner's sugar, melted butter and lemon juice.
Drill holes
in the cake with a toothpick and add a glaze.
