Mango Coconut Pudding
It is the
favorite dessert of our family (especially children)! My son fears mango ...
his birthday is in 2 days ... I should really do this to him!
Ingredients
Mango
Pudding
- 3 tbsp cornstarch
- A pinch of salt
- 1 cup water
- 3 tbsp water for cornstarch slurry
- 1 tbsp lemon juice
- 3 tbsp granulated sugar
- 1 cup frozen mangoes
Coconut
Pudding
- 2 1/2 tbsp condensed milk
- 3 tbsp cornstarch
- A pinch of salt
- 1 cup coconut milk
- 3 tbsp water for cornstarch slurry
Instructions
First, To
make a coconut pudding, mix the coconut milk, condensed milk and salt in a
saucepan. Heat over medium heat. In a small bowl, combine cornstarch and water
and slowly add to the coconut milk mixture. Stir constantly with a whisk until
thick. Remove from heat and transfer to a glass beaker or a container of your
choice.
Then, To
make mango pudding, mix frozen mangoes and water in a blender and mix until all
is liquid. Transfer to a saucepan and add sugar and salt. Heat over medium
heat. In a small bowl, combine the cornstarch and water and add the mixture
slowly to the pan. Stir in the mango mixture constantly until thick. Remove
from heat and gently add the pudding to the coconut pudding layer.
Allow the
sausages to cool to room temperature for 5 minutes, then refrigerate at least
